Souk El Tayeb

quality assurance


The objective of the quality assurance system is to maintain the highest standards of health and safety through the entire organization at the Souk, Beit's, and Tawlet's.

Souk el Tayeb developed its own quality assurance system (http://bit.ly/2RSeuTh), including guidelines, training, and inspections. A Rules and Regulations Guide must be read and signed by every new farmer, producer, and cook who wishes to join the organization. These Rules and Regulations were adopted after a careful study of international best practice to ensure stringent control on the goods sold at the farmers market and prepared in Tawlet.


Those guidelines include: 


  • performing site visits to the farmer's markets in order to inspect the quality standards and adherence to the rules and regulations;

  • being present at Souk el Tayeb to provide farmers and producers with onsite assistance;

  • organizing field visits to understand the farmers and producers’ environment and day-to-day business and to assist them in their work; 

  • and overseeing all cooking processes in all Tawlet kitchens, and hosting regular staff training in food handling and health and safety.
